We Suffer No Fools! It's April Foods Day!

Okay, April Fools' Day, we get it—a day of irony, jokes, and levity. It's needed now. But at The Spruce Eats, we've decided to take a different approach and make April 1st all about what we love and love to share with you.
 
This Friday, we invite you to celebrate April Foods Day with us. We are celebrating all things spring produce, April food holidays, and recipes we've been pining away to make during the winter months.
 
In the United States, we're fortunate to get most produce any time of the year. But any farmer, chef, food lover, or your bestest friend will tell you nothing tastes as good as in-season fruits and vegetables. Fresh fava beans (which need to be shelled correctly) are a revelation in so many ways. As are fresh peas and their cousins, snow and sugar snap. Come on down rhubarb for all that sweet-tart berry flavor. And for all that work required to get to their core, artichokes still steal my heart. Now is the time to try all of the carrots outside of a plastic bag, especially on April 4th, International Carrot Day.
 
Speaking of food holidays, there is one every day of April. Here are my highlights for each week, with a couple of extra selects.
Week 1: National PB&J Day (April 2) with a salute to New Beer's Eve and National Beer Day, April 6th and 7th, respectively.
Week 2: National Grilled Cheese Sammie Day (April 12) with honorable mention to National Empanada Day (April 8) and National Cheese Fondue Day (April 11).
Week 3: We are going big time for National Eggs Benedict Day (April 16) with a lobster roll variation and National Rice Ball Day (April 19).
Week 4: National Shrimp Scampi Day (April 29) with special shout outs to National Pigs-in-a-Blanket Day (April 24) and National Pretzel Day (April 26).
Using some of the produce above, the recipes I am most excited to dive into are this rhubarb custard pie, snow peas with butter and lemon, roasted carrot hummus, easy roasted whole artichokes, and grilled carrots will make my next cookout.
 
So with all of this good-good, who needs to make a fool out of someone? Certainly not us. And if you still need a couple of yolks to tell, Eggs For Dinner has all of the egg-sential puns for your reading and eating pleasure.
