I know. It's Wednesday. But we all deserve the occasional mid-week celebration. A solo party. A secret late-night rendezvous with our significant other after the kids have gone to bed. And this kind of party? This kind of party requires the most irresistible kind of munchies to be celebrated correctly. I don't make the rules.
 
This Southwestern walking tacos recipe is everything you love about tacos, inside of a bag of chips. It's the kind of recipe that feels like it was dreamt up for a day exactly like today. If my heart wasn't set on it, I'd make this jalapeño popper dip or these Korean fried chicken wings. I also have these fried pickles, cacio e pepe corn nuts, and cheese balls with guava dipping sauce on my mind more than I should.
 
I wouldn't be me if I didn't make room for something sweet. And I'm never not in the mood for ooey gooey butter cake and cobbler. I would also be absolutely delighted to get cozy with some soft peanut butter cookies or a slice of this dreamy chocolate bundt cake.
 
Forget the possible repercussions that tomorrow may bring. Today is the perfect day to indulge in the kind of foods that make your heart happy in the here and now.
